HM Pectin (High Methoxyl, DE >50%) gels with sugar and acid. Used in high-sugar jams and jellies. LM Pectin (Low Methoxyl, DE <50%) gels with calcium ions, used in low-sugar and dairy applications. Amidated LM pectin offers more flexibility in calcium sensitivity.
