What is Pectin? — The World's Favourite Natural Gelling Agent

Pectin is a naturally occurring, plant-based polysaccharide (complex carbohydrate) found in the cell walls of all higher plants. It is most concentrated in the peel of citrus fruits (orange, lemon, lime, grapefruit) and in apple pomace — the solid by-product of apple juice and cider production. Commercial pectin is extracted from these fruit by-products using hot water and mild acid, then purified, dried, and standardised.

Pectin is the most widely used gelling agent in the food industry worldwide — responsible for the characteristic texture of jams, jellies, marmalades, fruit gels, yoghurt-fruit preparations, and many other products. Pectin is classified primarily by its degree of esterification (DE) — the percentage of galacturonic acid units that are esterified with methanol. This determines how and under what conditions the pectin will form a gel, and therefore which applications each grade is suited for.

Typical Strawberry Jam Formula Using MAPECTIN HM

  • Strawberries (crushed/puréed): 450 g
  • Sugar: 550 g
  • MAPECTIN HM Medium Set: 5–7 g (0.5–0.7% on finished jam weight)
  • Citric acid (50% solution): 5–8 g (to adjust pH to 3.0–3.3)
  • Water: as needed
  • Method: Mix pectin with sugar → add to fruit → heat to 104°C (setting point) → add acid → fill hot into sterilised jars → invert seal.

What is Pectin and what is it used for?

What is the difference between HM Pectin and LM Pectin?
High Methoxyl (HM) Pectin (DE >50%) requires high sugar content (>55° Brix) and low pH (<3.5) to form a gel — ideal for traditional jams, marmalades, and fruit jellies. Low Methoxyl (LM) Pectin (DE <50%) gels with calcium ions without requiring high sugar — perfect for low-sugar jams, dairy desserts, yoghurt preparations, and diabetic-friendly products.
Is MAPECTIN Pectin vegan and suitable for HALAL/KOSHER products?

What is the E number for Pectin in Europe?

How much pectin is used per kilogram of jam?
Typical HM Pectin usage in traditional jam: 3–8 g per kg of finished jam (0.3–0.8%). For LM Pectin in low-sugar jam: 5–12 g per kg (0.5–1.2%). The exact dosage depends on fruit type, desired gel strength (measured in SAG degrees or gel strength g/cm²), soluble solids content, and pH. Can Pectin replace gelatine in confectionery products?
Yes. Pectin is the most widely used gelatine substitute in confectionery — particularly for vegan, HALAL, and KOSHER markets. HM Slow Set Pectin at 1–2% produces gummy-type confectionery with good texture, clean flavour, and faster setting time than gelatine. Pectin gels also have a cleaner mouthfeel and release flavour more readily than gelatine gels.

How should Pectin be dissolved before use?
To avoid lumping, always disperse MAPECTIN Pectin in a dry mixture with 5–10 times its weight of sugar before adding to water or fruit. Alternatively, pre-wet the pectin with a small amount of cool water while stirring vigorously, then add to the main batch. Pectin disperses well at temperatures above 75–80°C with adequate agitation. Do not heat pectin solutions at high temperatures for extended periods — this degrades the pectin and reduces gel strength.
